Lakedale Resort Weddings

From rehearsal to reception… AND BEYOND

We have put together several packages especially cut out for this venue nestled in the lush forest just at the Corazon of the San Juan Islands. We offer one, two and three day packages that will cover all your food service needs. From a degustation of exotic pizzas for your welcoming. Paellas made with local seafood or meats from our local farms for your reception, late night snacks, lunch options for the wedding day and brunch for the fair well. 

   

  We strive to address the disconnect between typical catering and great restaurant experiences. From formal sit-down dinners to casual meet and greets, our culinary experts team will help you plan the perfect menu to meet your needs. (Ask for tastings - for a fee)

   Whether you’re interested in a buffet, seated dinner, activation stations, or your own custom combination, there’s a menu to suit your mood. And we like to keep it fresh, so don’t hesitate to ask us about our seasonal and customized dish options. 

  We are a self-sufficient Catering Service, meaning we will bring all the cooking equipment and the cooking staff.

LAKEDALE RESORT on San Juan Islands

Couples from the Pacific Northwest and beyond choose Lakedale, for a reason.  Lakedale offers oodles of options for your ceremony, reception, and all the other events you create for your wedding weekend. Lakedale can accommodate between 80 and 200 guests. Great Room in the Lodge has beautiful wooden floors so is a perfect dance floor!

BURRATA & MARGHERITA PIZZA

Basil, fennel seeds, red pepper fakes, garlic Himalayan salt, San Marzano tomatoes, manchego cheese, burrata cheese. 

LA MENORQUINA

Pecorino cheese, mozzarella, gran reserva cheese from Minorca sobrasada and local honey. 

LA JAMONA

Pecorino, mozzarella cheese, EVOO and Iberico Ham.
 

LA FALSA VEGANA

Mozzarella, pecorino cheese, bacon, spinach with garlic and Kalamata olives.

San Marzano tomato base, mozzarella cheese and artichokes.

CARBONARA PIZZA

 Bacon, pecorino romano, mozzarella, black pepper, eggs (yolk intacts) & lemon zest.

 Homemade nutella, maldon salt and EVOO.

Iberian chorizo, bellota ham, iberian sausage fuet, iberian cured loin. Served with fresh fruits, macrona almonds, piparras, breads & olives oils.

CHEESE PLATTERS

Contain a selection of local & high quality cheeses. Served with fresh fruits, macrona almonds, nuts, quince paste, fig bread, tomato marmalade. 

HUMMUS & PIZZA BREAD

With garbanzo beans, tahini, lemon juice and yogurt. Served with a mix of spices, olive oil, microgreens & crunchy chickpeas.

skewers with cherry tomatoes, fragrant basil, and fresh mozzarella to make a deliciously simple no-cook appetizer.

FRIED POTATOES, PARNIP AND SWEET POTATOES CHIPS

Served with home made Mama Lil's Peppers ali-oli.

SUMMER MELON SALAD

Feta cheese, melon, cucumbers, basil, lime, honey, fresh mint and pistachios

KALE CAESAR

Kale, house dressing, sourdough croutons, avocado oil, lemon juice, dijon mustard, champagne vinegar, tamari sauce, local honey, parmesan cheese and lettuce.

ENSALADA D- COL

Cabbage, green apples, carrots, cilantro and mint. With an asian seasoning, very fresh and delicious. (Vegan) 

STRAWBERRIES SALAD

Organic greens, strawberries, red onion and carrots. 

Homemade strawberries and citrus vinaigrette. 

MEDITERRANEAN SALAD

Organic lettuce mix, red onion, carrots, radish and a homemade vinaigrette with Pedro Ximenez vinegar, lemon, local honey, 

French Mustard and Harissa.

WARM SALAD OF CUBAN LOCAL PORK

Local pork shoulder from Auroras Farm, cooked at low temperature for more than 24 hours in a Cuban style marinade. Served with arugula, black cumin, avocado and beet kimchi . 

BERENJENA AL ANDALUSI

Eggplant breaded in semolina, deep fried in olive oil then covered with local honey, later sprinkled with Aleppo pepper and salt Maldon. 

OCTOPUS AND POTATO

Cooked at low temperature in a broth made from rockfsh from Minorca. Served with semi spicy paprika oil and ali-oli. 

CHICKEN TIKKA

With chickpeas salad, radishes, pomegranate fruit and indian seasoning. Served with naan bread and mint chutney.

COHO SALMON

Cooked at low temperature, later dressed with shallots, soy sauce and finished in a braising ginger oil. 


DESSERT TABLE

Local eggs, sweet wine, mascarpone, soletas cookies, expresso coffee & cocoa. Gluten Free option.

CHOCOLATE CAKE WITH COFFEE MOUSSE

This chocolate and coffee cake is flourless. It is absolutely delicious and a great gluten free option.

XURROS & XOCOLATE

Xurros are made with organic flour and covered with sugar, then served with hot chocolate.

BASQUE BURNT CHEESECAKE

Local eggs, cream, sugar and cream cheese.

OLIVE OIL CAKE

Served with creme fraiche.

TORRIJAS

Brioche bread soaked in coconut milk flavored with spices and citrus. Then we torch it just like a cream brûlée giving it a fine crystallized layer of sugar. Accompanied with local vanilla ice cream.

Garbanzo beans,Tahini, lemon juice, garlic and a little yogurt. Served with a mix of spices, olive oil, micro-greens & crunchy chickpeas.

Typical pastry from Minorca. This formatjades are filled with local & organic grass fed ground beef, Arabic seasoned and combined with marmalade giving it a savory sweet explosion of flavor.

Local clams from Westcott Bay, garlic, Chile del Arbol and Albariño wine.

SALMOREJO CORDOBES (vegan option)

Local tomatoes, bread, garlic and a extra virgin oil. Served with Bellota Ham. Vegan option.

PAELLA MARINERA

Local and live spot prawns from Northsound Seafood or white shrimp, clams and mussels from Westcott Bay Shellfish and squid, cooked in a sofrito and finished in our homemade fish broth. Cooked with our quality Bomba rice from Valencia, Spain.

PAELLA DE LA HUERTA

A fusion of organic and local vegetables cooked together in a sofrito and finished  in our homemade 100% vegan broth.
